Two safe methods (and one unsafe one)
The USDA allows three ways to thaw a turkey: in the refrigerator, in cold water, or in the microwave (practical only for very small birds). Leaving it on the counter overnight is the one method everyone's grandmother used and food safety agencies beg you not to: the outer inch of meat sits in the bacterial "danger zone" between 40°F and 140°F for hours while the center is still frozen.
Refrigerator thawing is slowest but most forgiving. Leave the turkey in its original wrapper, set it breast-side up on a rimmed tray or in a roasting pan to catch drips, and put it on the bottom shelf so nothing below it can be contaminated. Once thawed, it keeps safely for another 1–2 days, so erring early costs nothing.
Cold-water thawing is the rescue method. Keep the bird sealed (or in a leak-proof bag), submerge it in cold tap water in a sink, cooler or clean bucket, and change the water every 30 minutes so it stays cold. Cook the turkey as soon as it's thawed — it doesn't get the fridge's 1–2 day grace period.

When to move it from freezer to fridge for Thanksgiving
Thanksgiving is the fourth Thursday of November. Count back from Thursday morning and add one day of cushion:

If you're brining, add the brine time on top: the turkey has to be fully thawed before it goes into a wet brine, and a dry brine wants 1–3 days in the fridge on its own. That can push an 18-pound bird's fridge date to the weekend before Thanksgiving. Fresh (never frozen) turkeys skip all of this but should be cooked within 1–2 days of purchase.
It's Thursday and the turkey is still frozen
- Mostly thawed, icy cavity: run cold water into the cavity for a few minutes to free the giblet bag and neck, then roast. Add 15–30 minutes to the cook time.
- Half frozen: cold-water thaw at 30 minutes per pound of what's left — 3–4 hours usually finishes it — then roast.
- Solid: roast it frozen. It's safe, per the USDA. Put it on a rack at 325°F, plan on roughly 50% longer than the normal time (a 14-lb bird goes from ~3½ hours to ~5¼), pull the giblet bag with tongs when the cavity loosens after an hour or two, and season the skin once the surface thaws. You can't stuff it or brine it, but the meat is fine.
Whatever the method, the finish line is the same: 165°F in the thickest part of the thigh, the wing joint and the thickest part of the breast, on an instant-read thermometer. Pop-up timers are set higher and will overcook the breast.
After it's thawed
A refrigerator-thawed turkey can wait 1–2 more days before roasting and can even be refrozen (with some loss of texture). A cold-water-thawed bird must be cooked right away. Once cooked, carve leftovers off the bone within two hours and refrigerate; they're good for 3–4 days, or 2–6 months frozen. Cooked turkey reheats best covered, with a splash of stock, to 165°F.
