The rule and why it works
Butterball, the USDA and every cookbook land on the same number: 1 pound of whole turkey per person. It sounds like a lot until you remember that a whole bird is about half bone, skin and moisture that cooks off. A 1-pound share of raw, bone-in turkey yields roughly 6–8 ounces of cooked meat, which is a generous plate for an adult who is also eating stuffing, potatoes and pie.
Bump it to 1½ pounds per person if leftovers are part of the plan — and at Thanksgiving they usually are. Count children under 12 at ½ pound, and teenagers and big eaters as adults or a bit more. If your crowd skews toward dark-meat lovers or you're serving turkey as the only protein at a Friendsgiving where the sides are lighter, round up.

Whole, bone-in turkey, adults only. Add ½ pound for each child. Minimum 8 pounds because small birds are mostly bone; maximum 24 pounds per bird because bigger birds roast unevenly and won't fit most ovens.

When to buy two turkeys
Above about 24 pounds, buy two smaller birds rather than one giant one. Two 15-pound turkeys thaw in 4 days instead of 7, roast in about 4 hours instead of 5-plus, brown more evenly, and give you twice the drumsticks and wings — which is what half the table wants anyway. If your oven can't fit two, roast one the day before, carve it, and reheat the slices in a covered dish with a splash of stock; roast the second on the day for the presentation moment. Another option: one whole bird plus a bone-in breast, which feeds the white-meat crowd without a second full carcass.
Boneless breast, bone-in breast and other cuts
- Boneless turkey breast: ½ pound per adult, ¾ pound with leftovers. There's no bone to subtract, so a 3-pound roast feeds six.
- Bone-in breast: about ¾ pound per adult. A 6–7 pound bone-in breast serves eight.
- Turkey legs or thighs only: one leg quarter (1–1½ pounds bone-in) per adult; they're meatier than they look.
- Pre-cooked or smoked turkey: plan ½ pound per person, since shrink has already happened.
- Spatchcocked whole bird: same pound-per-person math as a whole turkey; it just cooks in half the time.
Reading the label
Frozen turkeys are sold in ranges — "10–14 lb," "16–20 lb" — so check the exact weight on the tag. That number includes the neck and giblets packet and any injected solution ("contains up to 8% of a solution of water, salt…"), which is why a self-basting bird yields slightly less meat per pound than a natural one. If you're between sizes, go up: leftover turkey freezes well, and running out doesn't.
What else the turkey math tells you
Once you know the bird's weight, three other numbers fall out of it. Thawing in the refrigerator takes about one day per 4–5 pounds (a 15-pound bird needs 4 days). Roasting at 325°F runs roughly 13 minutes per pound unstuffed, 15 stuffed. And the drippings from a 12–16 pound bird make about 3–4 cups of gravy, which covers 10–12 people at the standard third of a cup each.
